Anhydrous Milk Fat - AMF
Anhydrous milk fat (AMF) is a highly purified milk fat from which virtually all water and non-fat milk solids have been removed. It typically contains at least 99.8% milk fat, with only traces of moisture and milk solids. AMF is usually yellow to light yellow, with a pleasant dairy-butter flavor and aroma, and is homogeneous in the melted state. It is characterized by a well-defined melting profile and consistency, making it ideal for standardizing fat content and functionality in a wide range of food formulations.
Sources
AMF is produced exclusively from cow’s milk and/or dairy products (sweet cream, butter). Production involves:
- separation of cream from milk,
- concentration and purification of fat from cream or butter,
- removal of water and remaining non-fat solids (vacuum evaporation, separation),
- filtration and standardization of fat content.
- The result is a stable milk fat suitable for industrial processing and international trade.
Variations
Several AMF types are available on the market, commonly differentiated by:
- milk origin (regional origin, seasonal differences in color and flavor),
- processing method (standard AMF, AMF with controlled melting point),
- oxidative stability level (achieved through specific processing and inert atmosphere).
In addition to standard AMF, the following are used in practice:
- AMF for industrial processing (larger pack sizes, focus on functionality),
- AMF tailored to specific applications (e.g. for ice cream, chocolate, bakery) with tightly controlled rheological and thermal properties.
Applications In The Food Industry
Dairy Industry
- standardizing milk fat content in milk powders, condensed milk and evaporated milk,
- production of cheeses, processed cheeses and spreadable cheese products with precise fat content and fat profile,
- formulation of dairy beverages and fermented products (yogurts, kefirs) when fat must be adjusted without adding extra water or lactose.
Use of AMF ensures consistent quality regardless of seasonal variations in raw milk composition.
Confectionery Industry
- a source of milk fat in chocolates and chocolate fillings (improved mouth melt, gloss and creaminess),
- a component in caramels, toffees, toppings and cream fillings to achieve specific texture and rich dairy flavor,
- a fat phase in instant desserts and powder mixes where storage stability and easy rehydration with other dairy ingredients are critical.
Due to the absence of water, AMF reduces the risk of sugar crystallization and microbial instability in high-solids products.
Bakery Industry
- a dairy-fat ingredient for flavor and aroma enrichment (croissants, puff pastry, brioche, fine bakery products),
- an agent for improving layering and flakiness in laminated doughs,
- a component in dry mixes and premixes, often combined with milk powder to provide a complete dairy phase.
AMF enables more stable and predictable dough handling and consistent product quality between production batches.
Ice Cream And Frozen Desserts Industry
- the main carrier of milk fat in base mixes,
- a tool for precise control of milk fat, non-fat milk solids and total solids ratio,
- an agent for improving creaminess, overrun and stability during freezing and storage.
Use of AMF facilitates formulation of concentrated base mixes and aseptic systems that are later diluted and homogenized.
